food inc. review

     Yesterday in class we viewed a movie called food Inc. here is my opinion on the movie. First let’s point out the fact that the movie was well composed and pointed out facts really well. It had an anti-industrial food standpoint, which brought out many good arguments against big food companies. I myself can’t say I’m anti big business but what these companies are doing is wrong. Food should be good for you, but after all the biological alterations what’s left is better off in the garbage.
            Corn is the biggest crop currently farmed in America. It is used to make most snacks and beverages. Practically most if not any product you buy has corn in it. Corn is good creamed or on the cob, but all these byproducts created from it is not good for you. The government is the one who caused this because they pay farmers to over produce and subsidize according to the amount of corn produced. This same corn is fed to livestock. Corn is not natural for these animals to eat. Cows are supposed to eat grass, as to chickens and grain, but these big companies use this feed to fatten up the livestock and with the help of their chemicals make them grow faster. So of course they can be sent to the slaughter faster.
I’m not even going to tell you about the anomalies cause by these diets and the physical suffering these animals go through. Just like the movie says the government needs to take a stand against big business and make them change their ways, because they may not be eating the food they produce but we are. We also should have the right to know what’s in our food. All and all this is a great movie and I’m looking at food in a whole new perspective.

1911 essay


                                                 Curry chicken through the years
                Curry chicken is a traditional food for Trinidadians. Through the years not much has changed in the recipe, but many things changed in the way we get the ingredients. I believe in 1911, about hundred years ago curry chicken was much healthier and tastier. To prove my point I shall examine the differences in preparation and ingredients. These two has a direct role in how healthy and delicious the curry will be.
                It’s not curry chicken without the chicken. When we need chicken in my house we would go to the grocery store or the butcher.  However in 1911 there were no refrigerators, if you wanted chicken you would have to walk to your yard and grab one. Of course you would have to kill the chicken, but let’s not get into that. Back then chickens were raised naturally, as opposed to now chickens are full of growth hormones and steroids. Though in 1911 preparing chicken was not as easy and convenient as now, the natural chicken would definitely be more nutritious because “you are what you eat”. If you eat a chicken full of steroids, you are digesting the same growth hormones and steroids they eat. In Trinidad people still raise their own chickens in their front yard. The chicken is more meaty and juicy, which makes curry to this day in Trinidad taste better.
                So chicken is good, but we can’t have curry without vegetables and herbs.  In Trinidad 1911 it was normal for people to have vegetable and herb gardens. People used to trade and share crops between families and neighbors. Compared to now where our produce is shipped from all over the world, not mentioning the pesticides we use on the crops. The vegetables used to grow without chemicals and they were fresher. Tomatoes and lettuce for salad were all crisp and delicious. Now tomatoes are tasteless, the lettuce has no nutritional value, and garlic come   pre peeled and sliced, and even powdered. 
                Next is on to the preparation.  Preparing curry now is a whole lot different compared to how it was done in the past. The main reason is that there was no electric or gas stoves back then. Instead of gas and electric stoves mud stoves were used. They were constructed of mud and fueled with wood.  Since there is no refrigeration the chicken had to be prepared and marinated in a different way. Today we marinate the chicken in the spices, onions, garlic and oil. Back then ghee was heated in a pot then the herbs; spices, onions, and garlic were put into the pot and burned. Then the chicken was added with water, and then simmered until the chicken was fully cooked and the gravy becomes thick. This gave the curry a distinct taste that was lost in time, because most people don’t cook curry this way anymore.
                Today after the chicken is marinated the chicken is cooked in pot with oil and water, and then simmered until the chicken is fully cooked. This gives a watery curry unlike the other which is thick and dry. The dry curry is super flavorful and tender.  The watery curry or the curry of today is mostly bland, the chicken doesn’t absorb the flavor it stays in the gravy. Meanwhile the rice is boiled; the lettuce and tomatoes are sliced for the salad. Really nothing is different between now and then in this part except the ingredients. The food is then dished out on a plate and eaten on a table. The only big difference when eating between now and then is the food is eaten with your hands instead of a fork.
                So as you can see in 1911 even though there was more work in preparing a meal the outcome was much tastier and healthier than today’s version of the same dish. You can also make the link between fresh all natural vegetables and taste. As well how all-natural chicken is tastier, juicier, and absorbs flavor much better than store bought cage raised chicken. Hopefully we can all revert back to all natural ways and enjoy the same food that was eaten in 1911.
